Dalton Greene

1) Briefly tell us about yourself.
Coffee lover, café owner in Limerick city. 

2) Have you ever entered a coffee competition before?
Yes! I have entered the Irish Barista championship in 2016, the brewers cup in 2017 and aeropress championship 2016.

3) Why did you decide to enter the Brewers cup?
I love brewing coffee and it gives me a chance to question why I brew certain ways.

4) What would your autobiography be called?
The one true king, a hero among mere mortals.

5) If you could have any coffee superpower, what would it be? Refractometer Lazer eyes 

6) What coffee producing country would you most like to visit and why?
Hmmm…Ethiopia, apart from the amazing coffees that are produced there I’ve heard the people are very welcoming there. 

7) Whats the best coffee experience you’ve had to date?
In Ireland probably anytime I go to vice as Tom always serves me tasty coffee quickly and has genuine chats with me.

8) If you were trapped on a desert island, what 3 things would you bring?
Hammock, knife, ice cream 

9) If you weren’t working in the coffee industry, what would you be doing?
Making money

10) Name of a song that best describes your coffee skills.
Dear Mama

11) If you were an animal, what would you be and why?
I’d prefer to be an insect, more exactly a bumblebee because I make that sweet sweet nectar.

12) A fact about yourself that you’re embarrassed to admit to a room of new people.
I don’t like coffee 


Jonny Northcutt

1) Briefly tell us about yourself.
I’m Jonny, I’ve been working in coffee for almost 4 years. I studied accounting and finance in college and at the end of that decided it wasn’t for me and have been pursuing excellent coffee ever since. First as a barista and now as a roaster with Roasted Brown.

2) Have you ever entered a coffee competition before?
I’m competed in the Brewer’s Cup 2 years ago, didn’t do great but learned a lot and I’m hopeful of doing better this time. 

3) Why did you decide to enter the Brewers cup?
As someone that loves drinking filter coffee it is the ultimate opportunity to show case the beauty of filter and share a wonderful coffee experience with others. 

4) What would your autobiography be called?
Nuts About Beans

5) If you could have any coffee superpower, what would it be?
I’ve seen some good answers on this question before but it would have to be “Single Brew Perfection”- whether it’s espresso or filter would be dead handy for it to be perfect every time without any dial in. The downside would be the challenge and fun of trying to maximise flavour.

6) What coffee producing country would you most like to visit and why?
Guatemala, it’s quite up and coming in its quality and it’s an origin that has consistently fallen into my favourites category year to year. 

7) Whats the best coffee experience you’ve had to date?
The best coffee related experience has been Coffee Roasters Guild Camp, it was a great opportunity to meet and chat to other roasters in quite an open to sharing environment. 

8) If you were trapped on a desert island, what 3 things would you bring?
Knife, water filter, lighter

9) If you weren’t working in the coffee industry, what would you be doing?
Probably something accounting related…

10) Name of a song that best describes your coffee skills.
Drop it Like It’s Hot 

11) If you were an animal, what would you be and why?
Cat – I’ve grown to like napping.

Stephen Houston

1) Briefly tell us about yourself.
Hi I’m Stephen Houston, I’m 33 years old and I’m the Head Roaster at Bailies Coffee Roasters based in Belfast.

2) Have you ever entered a coffee competition before?
Yes I have, I’ve done brewers cup 3 times, cup tasters twice, UK batch brewers cup, Barista league and entered in barista next month.

3) Why did you decide to enter the Brewers cup?
I won it back in 2017, came 3rd last year and really feel I have learnt a lot more and want to keep going, competing makes me better all round!

4) What would your autobiography be called?

‘Crushed it’ 

5) If you could have any coffee superpower, what would it be?
Roast level sight, ability to tell roast level just by looking at it!

6) What coffee producing country would you most like to visit and why?
Costa Rica, the coffees we have bought over the last year were amazing and would love to see where they are produced. 

7) Whats the best coffee experience you’ve had to date?
Getting to compete on the world stage at WBrC in 2017 in Budapest.

8) If you were trapped on a desert island, what 3 things would you bring?
My wife, my phone, all the pizza in the world.

9) If you weren’t working in the coffee industry, what would you be doing?
Probably wishing that I worked in the coffee industry. 

10) Name of a song that best describes your coffee skills.
‘So Fresh and so Clean’ – Outkast

11) If you were an animal, what would you be and why?
A shark, I can’t swim backwards and never take a rest.

12) A fact about yourself that you’re embarrassed to admit to a room of new people.
Went on a school trip to France and on the first night cried down the phone because i hated it, the family i stayed with were weird, could barely speak/understand French (obviously lied about my skills to go on the trip) and missed my mum, I was 14 years old.

I’m Philippa Jordan, from Bangor, and I work in Established Coffee, Belfast. 

2) Have you ever entered a coffee competition before? 
Just the 2018 Northern Irish Aeropress Champs #inthebin

3) Why did you decide to enter the brewers cup?
A mixture of wanting to challenge myself, and peer pressure. 

4) What would your autobiography be called? 
“Un-philtered”

5) If you could have any coffee superpower, what would it be? 
The ability to impress David Titmus. 

6) What coffee producing country would you most like to visit and why?
Thailand. Because I’m basic. 

7) What’s the best coffee experience you’ve had to date? 
Everyman Espresso in New York, it was when I was first getting into specialty coffee.

8) If you were trapped on a desert island, what three things would you bring? 
Lord of the Rings – The Fellowship of the Ring
Lord of the Rings – The Two Towers
Lord of the Rings – The Return of the King 

9) If you weren’t working in the coffee industry, what would you be doing?
Probably still studying.

I was told to write snake. No idea why.
